DTMF phone keypad input support in ElevenAgents conversations

Agent conversation configuration now supports DTMF (phone keypad) input through optional dtmf_input_settings. Developers can configure digit timeout, use # as a terminator, and optionally redact keypad entries from transcripts and logs.
